My husband’s favourite dish from our big family dinners is my Mom’s layered salad. Due to health issues and scheduling issues, we didn’t have a holiday dinner with my family but I still wanted to make sure he had his layered salad. So, for the first time, I made the layered salad, and it was so easy!

Layer the following:

  1.  3 cups iceberg lettuce, followed by a sprinkling of salt and pepper.
  2. 6 hard boiled eggs, sliced; followed by a sprinkling of salt and pepper.
  3. 2 cups of frozen peas, thawed.
  4. 3 cups iceberg lettuce, followed by a sprinkling of salt and pepper.
  5. 1 package of bacon, cooked and cut up.
  6. 2 cups of grated cheddar cheese.
  7. 2 1/2 cups of mayonnaise, mixed with 25 ml of sugar.
  8. Top with chopped green onion and paprika.

Let it chill in the fridge overnight.
