Vegetable Recipe: Zucchini Boats

A fresh and tasty vegetable side dish.
Ingredients
  • 1 large zucchini
  • ½ large tomato
  • 1 green onion
  • 2 tbsp fresh green pepper
  • ¼ cup olive oil
  • ½ cup mozzarella cheese, grated
  • Clubhouse Vegetable Seasoning

Instructions
  1. Preheat the oven to 350°F.
  2. Cut off the ends of a large zucchini and half it lengthwise. I cut my halves in half because it was a very large zucchini.
  3. Scoop a bit of the inside out of each zucchini half to create a slight concave.
  4. Place the zucchini on a baking sheet or oblong casserole dish.
  5. Cut the tomato into slices and quarter the slices. Place them in the zucchini concave.
  6. Chop the onion and green pepper and add it on top of the tomato.
  7. Pour the olive oil over the vegetables.
  8. Place the mozzarella cheese on top of each zucchini piece.
  9. Shake the vegetable seasoning on top.
  10. Bake for 35 minutes or until the zucchini is tender.

    Yes!! My daughter is crazy about zucchini but I’ve long run out of ideas that I haven’t done over and over. I have everything but the Clubhouse seasoning so I’ll pick some up and surprise her with these. Easy peasy and they look yummy – thank you.

  3. What a great recipe for zucchini ~ thank-you! We normally slice them into rounds and fry them, then dip them in ranch dressing. This looks SO much better & I’m trying this tonight :)
