Side Dish Recipe: Cheesy Scalloped Potatoes

Everyone has their comfort foods, and scalloped potatoes are definitely one of mine. I love them because they are relatively easy to make, they’re filling and delicious, and there are so many ways to make them. Since they are something my kids will eat, I take advantage of the opportunity to sneak in a little extra nutrition with a cauliflower puree, and I use Dairy Oh! milk so that they are getting added DHA as well!

Cheesy Scalloped Potatoes

Cheesy Scalloped Potatoes are a great side for ham.
Ingredients
  • 6 large potatoes
  • 3 cups Dairy Oh milk
  • 1 cup cauliflower puree (steam and puree fresh cauliflower)
  • ½ cup butter
  • 4 tbsps flour
  • 1 tsp salt
  • ½ tsp pepper
  • ½ cup onion, chopped
  • 1 cup grated cheddar cheese
  • chives (optional)

Instructions
  1. Preheat the oven to 400 degrees.
  2. Wash and slice potatoes, keeping the peels on.
  3. Grease a large casserole dish, and place half of the potatoes in the dish.
  4. Mix the next 7 ingredients in a bowl and pour half of the mixture over the first layer of potatoes. Top it with the remaining potatoes, and then pour the last of the mixture on top of that.
  5. Top the casserole with the grated cheese and chives.
  6. Cover, and bake for 1 hour.

  4. This looks like such an easy dish to make. Yes, I too love a potato! Last Easter I hosted a family dinner. I gave away the left over scalloped potatoes and ham. The next morning my nephew asked if any of the leftover potatoes were brought home…he was a happy boy!
