Side Dish Recipe: Stuffed Peppers

Eating well doesn’t have to be difficult, and these easy to make stuffed peppers prove that!

Easy to make stuffed peppers.
  • 1 tbsp olive oil
  • 2 cups chopped mushrooms
  • 1/4 cup chopped onion
  • 1 celery stalk, chopped
  • Uncle Ben’s Bistro Express Quinoa & Brown Rice with Garlic
  • 1/2 can black beans
  • 1 cup cottage cheese
  • 3 large bell peppers
  • 1/2 cup grated cheddar cheese
  1. Preheat the oven to 400 degrees F
  2. Heat a frying pan with the olive oil.
  3. Add the mushrooms, onion and celery to the pan, heat for 5 minutes.
  4. Add the package of rice and the black beans to the pan and heat for a few minutes.
  5. Mix in the cottage cheese.
  6. Cut the tops off of your bell peppers, remove the seeds.
  7. Fill the bell peppers with the rice mixture.
  8. Top with grated cheese.
  9. Bake for 30 minutes.

    These look delicious! My mom always makes the same recipe when she makes stuffed peppers. This would be a nice change. I could make them for her for mothers day :)

    Oh this looks really good! We make a stuffed spaghetti pepper with rice instead of noodles almost weekly! We love the stuffed peppers! I will have to try this one! Thanks for the great recipe!

    Yum, I lvoe stuffed bell peppers but usually do them as the main entry. Never thought to try them as the side dish.
