Since we were in Florida over the Canadian Thanksgiving weekend, we celebrated a little late and just had Thanksgiving last week. Which means we have been eating turkey for a week! I don’t actually mind because I love turkey sandwiches and I make a turkey casserole that I enjoy as well. My turkey casserole is so simple because I just put leftover turkey, stuffing, vegetables, potatoes and cream of mushroom soup in a casserole dish and bake. The adults in the house love it, but the kids are not as keen. I am always thinking of new ways to use up leftovers, and since I had some brie and cranberry sauce in the fridge I decided to create some Thanksgiving leftover hors d’oeuvre.

Turkey Brie Bites

Recipe Type: Hors D’oevre

  • Crackers
  • Brie
  • Leftover Butterball turkey, cut into small pieces
  • Whole berry cranberry sauce
  1. Arrange crackers on a microwave safe plate.
  2. Top with cheese and turkey.
  3. Microwave for 15 seconds or until the brie starts to melt.
  4. Remove from microwave and top each cracker with cranberry sauce.
  5. Serve.
You can use any kind of cracker that heats well.

I would have preferred a wheat cracker like Triscuits for these appetizers, but the rice crackers were good too. It was the perfect mixture of flavours and I will be serving these again! I may even have to think up some new appetizers to make with turkey that I can make with our Christmas dinner leftovers.

A delicious variation of this is a toasted turkey, brie and cranberry sandwich.
