I am the first to admit that I buy boxed stuffing or the frozen Butterball stuffing (that stuff is amazing!) rather than making my own stuffing from scratch, but my husband enjoys being adventurous in the kitchen and once tried his hand at apple cranberry stuffing. While it was a slightly sweeter stuffing than I am accustomed to, it was still very good! Here is his recipe…

Apple Cranberry Stuffing

Ingredients:

  1. 1/2 cup chopped onion
  2. 1/2 cup chopped celery
  3. 2 garlic cloves, minced
  4. 1/4 cup hard butter
  5. 2/3 cup chopped cranberries
  6. 1/2 grated apple
  7. 5 cups bread squares
  8. 1 tbsp brown sugar
  9. 1/4 tsp cinnamon
  10. 1/8 tsp nutmeg
  11. 1/8 tsp allspice
  12. 1/8 tsp cayenne
  13. 1/2 tsp salt
  14. 1/8 tsp pepper
  15. 1 tbsp apple juice
  16. 2 tbsp melted butter

Instructions:

Saute onion, celery and garlic in butter in a large frying pan until the onion is soft. Remove from heat.

Add ingredients 5 through 14 and mix well. Add enough apple juice until the stuffing is moist and holds together when squeezed. Stuff your turkey loosely.

He did a good job! The stuffing looked nice and tasted good, although a little different than any I have had before. Eric wasn’t crazy about the apple flavour in his stuffing, but I didn’t mind at all. I will definitely let him make it again!

If you have a love of apples and cranberries, you will probably really enjoy this stuffing. As someone who always skips the cranberry sauce, it wasn’t necessarily my cup of tea. I do appreciate the fresh flavours that you can only find in a homemade stuffing. When will someone figure out how to box that?
