The cold weather is here and while I do prefer sunny skies and warm air, I love winter cooking. The colder months are perfect for slow roasting meat, making homemade pizzas and for making comfort foods. My favourite comfort food is oven baked macaroni and cheese. My family likes it too, but they insist on baked beans and weiners along with it. I know, I have strange kids! They also love meatloaf, what can I say…
This year has been really nice for cooking because we are using our new Frigidaire Induction Range. I am finding new things I love about this range every day and it’s been really nice to cook up my favourite dishes in it. The probe helped me make a delicious and juicy turkey and a perfectly cooked roast. I love the three racks in this oven, and the way it evenly distributes the heat throughout the oven. The spacious oven allowed me to make two lasagnas and garlic bread, so I was able to freeze one of the lasagnas for my husband to make while I was traveling. I did the same thing with Shepherd’s Pie, ensuring that my boys ate a couple of good home cooked meals while my daughter and I were sailing the seas. I plan to take advantage of the space and pre-cook a few of our favourite dishes for those days when I’m too busy to cook. It will save us money because we will order food less often and it ensures that we are eating healthier meals. Who knew that an oven could make so many positive changes for our family?!
This weekend I am planning to serve my family chicken parmesan and perhaps I will make their beloved meatloaf. I picked up some cream cheese so that my husband may be inspired to bake his famous cheesecake too. What are you cooking this weekend?
