Cranberry Glazed Turkey Meatballs & Cauliflower Puree

•

Combining fun flavours and healthy food doesn’t have to be hard, it just takes a little thought and creativity. Sometimes it’s as simple as listening to your children and remembering their favourite meals. Getting them involved in the preparation is also fun! These cranberry glazed turkey meatballs and cauliflower puree recipes are perfect.

My children all like meatballs. It’s one of the few meals I can serve without any backlash from any of the kids, and it’s a fairly easy meal to make. When I was asked to make a meal with the kids using meatballs, cauliflower and rice I decided I wanted to do something a little different than the usual beef meatballs, but I wasn’t sure what I would do. Then my daughter mentioned how much she loves Thanksgiving and I decided that turkey meatballs were the way to go!

Cranberry Glazed Turkey Meatballs

Ingredients:

  • 1 lb ground turkey
  • 1 package stuffing mix
  • 2 eggs
  • 1 can cranberry save, whole berries
  • 2 tbsps olive oil

Directions:

  1. Mix the turkey, eggs and dry stuffing mix in a bowl until completely mixed.
  2. Roll into 2″ balls.
  3. Pour the olive oil into a large frying pan and set to medium.
  4. Add the meatballs to the hot pan, brown on all sides.
  5. Add the cranberry sauce to the pan.
  6. Heat on medium until the excess sauce is evaporated.
  7. Serve.

cauliflower

My children like a cheese sauce on their broccoli so I indulge them with a cauliflower and cheese puree that resembles and tastes like a mild cheese sauce.

Cauliflower Puree

Ingredients

  • 1 head cauliflower, steamed
  • 1 cup grated cheddar cheese
  • 1/2 cup butter
  • 1 cup water (preferably the water from cooking the cauliflower)
  • 1 tsp salt

Directions

  1. Place all ingredients in the blender and mix on high for 2 minutes.
  2. Serve under or over the broccoli.

To complete the meal, I made a bag of Uncle Ben’s Jasmine Rice in the microwave. I served the meatballs over the rice and we had a delicious and healthy meal that reminded us of Thanksgiving.

Like your family, mine enjoys meatballs, as well as broccoli with cheese sauce. They aren’t too keen on cauliflower though, so this cheese sauce might be the perfect thing for them. Thank you!

Never thought of using cranberry sauce for meatballs, a nice tasty dish and something different instead of using the same sauce all the time

Did you just use a can of cranberries? Did you add anything to them, BBQ sauce? to get your meatballs that nice dark colour.
