No-Bake Peanut Butter Protein Bar Recipe

Snacks are in high demand in my house. There is the after breakfast and before school snack; the lunch box snacks; the after school snack; the two minutes after supper snack; the bedtime snack; the hour past bedtime snack. You get the idea. Someone is always asking for a snack. I keep a bowl of fruit readily available on the table, but that doesn’t always do the trick. They are busy kids and they need protein packed snacks that taste great without being full of sugar. Peanut butter is the obvious answer.

My kids can’t have peanut products at their school, so they always enjoy a chance to enjoy some Kraft Peanut Butter. My youngest asks for peanut butter bagels and my daughter will eat peanut butter with apple slices or celery. Kraft Peanut butter changes these already healthy snacks into something delicious that the kids will always come back for.  It’s a versatile ingredient. My teenage son enjoys peanut butter sandwiches but he prefers peanut butter cookies or these No-Bake Peanut Butter Protein Bars.

No-Bake Peanut Butter Protein Bars

Ingredients:

  • 1 ¼ cups Kraft Peanut Butter with Honey
  • 2 cups oats
  • ½ cup peanuts
  • ¼ cup white chocolate chips
  • ¼ cup coconut chips
  • 2 tbsp coconut oil
  • 1 tsp vanilla
  • 2 tbsp maple syrup
  • ¼ cup chopped pecans (optional)

Directions:

  1. Chop the peanuts, coconut chips and white chocolate chips in the food processor.
  2. Add the Kraft Peanut Butter with Honey, coconut oil, vanilla and maple syrup.
  3. Blend thoroughly.
  4. Move the mixture from the food processor to a large mixing bowl.
  5. Add the oats and mix them in thoroughly.
  6. Flatten the mixture onto a cookie sheet, using a rolling pin to make it even.
  7. Sprinkle the chopped pecans over the flattened mixture.
  8. Use the rolling pin to gently press the pecans.
  9. Refrigerate for 2 hours before cutting.

My daughter and I embraced Kraft’s “Make together. Stick together.” campaign and came up with this recipe by using the ingredients we had in the cupboard and the peanut butter made everything better. They were fun and easy to make, and now they are kept in the fridge so the kids can just grab one whenever they crave a snack. I have been snacking on them too. They leave me feeling full so I don’t reach for sugary snacks. So it’s true that Kraft Peanut Butter is much more than a spread, it’s an upgrade for any tasty snack and more.

      I hope you like them. They’re not sweet at all, so if you have a sweet tooth, you may want to add a little more maple syrup.

      They’re expensive here too, I just had some in the cupboard. They are definitely not an integral part of the recipe.

    I am a big fan of peanut butter and this with honey in I did not know existed. These bars look great and I must try them. I may add a bit more honey to sweeten them but I’m sure they are good without… next trip to the store I’ll look for the honey peanut butter. thanks for sharing.
