Thanksgiving Recipe: Pistachio Pudding

One of our regular Thanksgiving dishes is a pistachio pudding, or pistachio pudding salad. It is easy to make, very pretty to have on your plate, and the kids love it.

Here is the recipe.

Ingredients:

  • 1 package pistachio pudding
  • 1 can pineapple bits
  • 1 cup coloured marshmallows
  • 1 container cool whip
  • 1/2 cup pistachios (optional)

You can substitute white marshmallows and light cool whip if you would like.

Instructions:

Mix the dry pistachio pudding mix with the container of cool whip.

Open your can of pineapple and DO NOT DRAIN it. Add the pineapple and juice to the Cool Whip mixture and mix it all together.

              

Once you have mixed that completely, you can add your marshmallows. I sometimes add a little more than the cup it calls for, depending on how it all mixes together, and I add half of the marshmallows first, mix, then add the other half.

              

 

Once it is all mixed, put it in the fridge to set. I recommend three hours minimum, but I usually make it in the morning and let it set all day. And here it is ready to eat!
