Not only is this layered salad pretty, it is also incredibly delicious and if you choose to replace the sugar in the recipe with Swerve or Splenda, it is also a great Keto option.

My all time most requested dish to bring to any family gathering is my layered salad. It’s actually my mother’s recipe, so I can’t take credit for it, but I do anyway! To keep the dish a little more keto friendly, I use Splenda in the dressing topping rather than sugar, but you are able to do it either way. You can also use alternate types of lettuce and cheese, or switch the peas out for avocados. There’s so many ways to enjoy this dish and create a keto option. I hope it makes your Thanksgiving dinner this year!


Ingredients
- 6 cups chopped iceberg lettuce
- 12 hard boiled eggs
- 2 cups frozen peas
- 1 package bacon
- 2.5 cups grated cheddar cheese
- 2.5 cups mayonnaise
- 25 ml sugar
- 2-3 green onions
- salt
- pepper
- paprika
Instructions

Allow the frozen peas to thaw in a bowl. Set aside.

Cook bacon crisp and then crumble or cut into bite size pieces. Allow to cool.

Mix mayonnaise and sugar in a bowl.

Chop the green onions as garnish.

Layer the following:

Half of the iceberg lettuce, followed by a sprinkling of salt and pepper

Sliced hard boiled eggs; followed by a sprinkling of salt and pepper

Peas
-
Half of the iceberg lettuce, followed by a sprinkling of salt and pepper

Bacon
-
Grated cheddar cheese.

Mayo and sugar mixture, spread evenly over salad.

Top with chopped green onion and paprika.

Finding a dish that everyone loves, whether they want a keto option or not, is a game changer in my family, so this one is always a win.

My favourite salad is a Greek salad with a dressing of olive oil, lemon juice, salt pepper and a splash of maple syrup. This one looks good, though I’m not fond of iceberg salad.
