Appetizer Recipe: Turkey Brie Bites

Since we were in Florida over the Canadian Thanksgiving weekend, we celebrated a little late and just had Thanksgiving last week. Which means we have been eating turkey for a week! I don’t actually mind because I love turkey sandwiches and I make a turkey casserole that I enjoy as well. My turkey casserole is so simple because I just put leftover turkey, stuffing, vegetables, potatoes and cream of mushroom soup in a casserole dish and bake. The adults in the house love it, but the kids are not as keen. I am always thinking of new ways to use up leftovers, and since I had some brie and cranberry sauce in the fridge I decided to create some Thanksgiving leftover hors d’oeuvre.

I would have preferred a wheat cracker like Triscuits for these appetizers, but the rice crackers were good too. It was the perfect mixture of flavours and I will be serving these again! I may even have to think up some new appetizers to make with turkey that I can make with our Christmas dinner leftovers.

A delicious variation of this is a toasted turkey, brie and cranberry sandwich.

    I very much like the idea of such a quick and gratifying left over turkey snack. I also do not like to throwaway good food and this recipe gives me another option to use up turkey. Colorful, quick and easy recipes are a big hit in oiur home. We’ll do this one right after Thanksgiving.

    Yum, these sound great! I don’t do much with leftover turkey… I usually just do sandwiches.. Turkey, stuffing, cranberry on toast or a roll. Sometimes hot open sandwiches.

    There is always so much turkey to use up after the holidays, and ham too in my house! I think a brie, ham and mustard cracker would be delicious too!

    I have been making turkey sandwiches with cranberry sauce to help finish our Thanksgiving Turkey. My cranberry sauce turned out so rich and delicious this fall that I wondered why it was so good! It is really delicious with the turkey and, unlike other years, there in only a teaspoon left of two pounds of cranberries.
    I am not complaining but I do love Cranberry sauce. I think I will buy more cranberries tomorrow and make more sauce. Then I will make a casserole based loosely on your recipe. This should be so good. Yum!
