If you are planning on doing any entertaining, or even just putting together a night with family, you will want to put together some snacks that will be pleasing to children and adults alike. There are a lot of options of course, but you can never go wrong when you cook with cheese. Everyone loves a cheesy appetizer!
While my children and husband are always happy to see a cheese and cracker platter on the table, I like to go to a little more effort than that sometimes. Warm dips are a big hit in my house, so I decided to put together a couple of cheese and artichoke dip recipes for us to enjoy on family game night.
Cheesy Artichoke Dip
Ingredients
- 2 cups artichoke hearts
- 1 tbsp butter
- 1 medium onion, diced
- 1 tsp minced garlic
- 1 brick cream cheese
- ½ cup mayonnaise
- ½ cup milk
- 1 cup Creamy Mexicana Shredded Cheese
- 1 cup frozen spinach, defrosted
- 1 cup roasted red pepper
- 1 cup grated parmesan cheese
Instructions
- Preheat the oven to 375.
- Spray two small casserole dishes with non-stick spray.
- Melt the butter in a saucepan, add the onion and garlic.
- Add the cream cheese and mayonnaise to the browned onion. Mix until melted.
- Add the Kraft Creamy Mexicana Shredded Cheese with a Touch of Philadelphia and milk.
- Divide the mixture evenly into two separate mixing bowls.
- Add the spinach to one bowl, mix thoroughly.
- Drain the roasted red peppers and chop before added to the other mixing bowl. Mix thoroughly.
- Pour the two bowls into the two casserole dishes. Top each with half of the parmesan cheese.
- Bake for 25 minutes or until bubbling and the parmesan cheese has browned.
Skip the chips and dip cheese crisps or raw veggies.
In the past I have added cream to my dip recipes in order to get the rich and creamy texture I wanted, but that wasn’t necessary for this recipe. The Shredded Cheese with a touch of Philadelphia added all of the richness I needed and it saved me buying an extra ingredient. My Roasted Red Pepper dip is full of flavour and creamy too. It may be a new favourite of mine, but the men in the house preferred the spinach dip. It’s a good thing the recipe can be divided for two flavours!
